Un apasionado por la cocina, así es el chef Bogotano Jaime Galindo, quien inició esta carrera en su ciudad natal en reconocidos restaurantes como, Donostia y Astrid & Gastón; pero este solo sería el inicio de su recorrido, Jaime estuvo en restaurantes de Medellín y Cartagena, tales como Carmen, Hotel sofitel Santa Clara, entre otros, convirtiéndose, en un reconocido chef de la ciudad de Cartagena. Actualmente, Jaime vive en esta bella ciudad y está dedicado junto con su esposa Jaris a sus dos emprendimientos, Jaris Market, Sambal Bistró Caribeño y Casual Bistro Local donde sigue haciendo lo que mejor sabe “Creando y disfrutando de su pasión por la buena comida”.

From Bogotá, a cook by chance, his training and vocation for gastronomy occurred in the kitchen, he developed as a cook thanks to his time in restaurants such as Donostia, Astrid y Gastón and Carmen. He decides to take the next step with his brother, with the opening of Sambal, in Cartagena de Indias, which may open its doors thanks to the family union.

Jaris, is the mother, wife and daughter of a farmer who loves the land as much as his family, she grew up in the heart of the Montes de María, among the most beautiful landscapes, colors, smells and rich flavors, which make it today lover of good food, the countryside and its wonderful products. She is the CEO of the Jaris Market venture and in charge of public relations and events at Sambal Bistró. She is married to Chef Jaime Galindo, whom she defines as “an excellent human being and the best husband and partner.” He knows that behind each ingredient, there is a story of resilience, overcoming, effort, hard work and a lot of love, the same values that he tries to teach his most beautiful loves, as he tells Jerónimo and Julieta, his main driving force and inspiration.

Lawyer, PD Educator, currently pursuing a specialization in Social Management. I have 13 years of experience in the administrative part of organizations and 6 of them dedicated to human talent. I am convinced that human capital is the fundamental pillar of every business and the drive to provide value and warmth to the service.
